Both of these bars are crafted from cacao from ÖKO-Caribe, a mission-driven cacao sourcing company committed to benefiting small producers. They work with three small associations that represent 165 farms in Duarte. All of the cacao from ÖKO-Caribe is grown in agroforestry systems with the goals of sustainability, traceability, and transparency.
Through expert handling of the post-harvest fermentation and drying processes, they produce a great cacao with a deep cocoa flavor with notes of tropical fruits and a hint of nut.
In other news, I’m doing a very limited run of truffles for Valentine’s Day. They’ll be rich water ganache truffles with a shell of the new Duarte 70% chocolate. Each set will be four truffles.
