Announcing a New Bar: Peru 70%!
It’s been a long time coming, but I’m very excited to announce a new bar: Peru 70%!
I make this chocolate from organic cacao grown in the Amazonian highlands of Peru. This bar’s taste is all fruit with a pleasant acidity. I notice different flavors each time I taste it. I’ve tasted banana, apricot, strawberry, cherry, raisin and citrus.
Like all of my bars, Peru 70% is made using only use cacao and sugar. The process to make it is the same as the Upala bars, except that this cacao really wanted a lighter, slower roast to really bring out the fruity flavor notes.
I’ll be debuting the bar at a tasting at Cocova in DC this upcoming Wednesday (September 12th) from 5:30 – 8pm. In addition to Peru, we’ll also be sampling my Upala bars. Come on out and taste some chocolate!
Peru 70% is now available in the shop and will soon be making its way out to other retail outlets.
