New Melanger!
Look what arrived today!
It’s a new, larger melanger (currently sitting in my entryway…). Up until now, I’ve been working with 3 small melangers that can make about 8 lbs of chocolate at a time each. This one can do 40! Once put into production, this one will do most of the day-to-day chocolate making, freeing up the little ones for development of new bars.
I’ve still got to do the wiring and testing, but I’m hoping to be making chocolate in this beast soon. I’ll post some better photos once I’ve had a chance to clean it up and move it into place.

how is this beast working santha 40? how is it especially in getting the best smooth chocolate? my santha just cannot get me that smoothness of the dogaba’s of this world !
a gain i owe you Jamaican beans i have to send it soon i have been lately been distracted with a baby .
And one last one the bitterness in the dark chcolate i seem not to be able to do away with itwhateveri do roast,sorting etc do you alkhalise your nibs? . i tested again the dogaba one its smoothand abit rubbery but with no aftertest can you help ?
