Dom, over at chocablog reviewed my outgoing Upala 70% Nib & Salt bar. Chocablog Review: Upala Nib and Salt Short version: He really liked it (although wasn’t too impressed with the packaging): I love this bar. In fact, by the time I got around to writing about it, I only had one small chunk left. […]
I’m a little late on this–not nearly as late as my last post, of course, but still a little late. π The chocolate review blog Little Brown Squares reviewed all five of my bars and enjoyed each one, with the Upala 70% and the outgoing Nib & Salt bar being particular favorites: Potomac Chocolate, Woodbridge […]
Talk about a delayed post! I started this blog entry back in September of 2011. It’s been languishing in my drafts folder ever since (along with many others, although this is the oldest). π -ben I recently had a short conversation Twitter that got me thinking and that I thought I’d share with you. I […]
My Upala 70% Nib & Salt bar is changing into my new Upala 70% with Salt bar. The main reason for this is because I think that separate nib and salt bars make for a better tasting experience. I think the simplicity of just one added ingredient will allow that ingredient to really shine. Another […]

Obviously, I’m thrilled. π I’m also extremely grateful for all of those who backed my project or helped spread the word. […]

It also […]
Since we launched our first bar (Upala 70%) in late 2010, Potomac Chocolate has grown tremendously. When that bar launched, I was making chocolate with a convection oven, a PVC pipe winnower, and one small melanger. At launch, one shop carried Potomac Chocolate: Biagio Fine Chocolate (now Cocova). Potomac Chocolate is now carried in over […]
Back in January, I blogged about several new DC-area locations that had recently started carrying Potomac Chocolate. I also promised to blog more… Today, it’s everywhere else’s turn. π These ten shops have begun carrying some or all of my bars in the past several months. If there’s one near you, stop in and let […]
The 2013 Academy of Chocolate Awards were announced today, and I’m very excited to announce that my latest bar, the San MartΓn 70% was awarded Silver in the ‘Best Dark Chocolate Bean to Bar’ category. I am again hugely honored to be listed among such a great group of chocolate makers. You can view the […]
