This bar is made from 100% cacao and nothing else–no added sugar or cocoa butter. It’s fascinating how much more complex this bar is than the 70% cacao version. While that one has notes of fudgy brownies, graham cracker, and a little red fruit, this 100% bar has notes of dark caramel or coffee, a subtle coconut note, bright citrus acidity, and a smokey finish.
