You’re doing what?!?!
That’s the usual reaction when we tell our friends and family about our brand-new venture into the chocolate-making world.
Hi and welcome to Potomac Chocolate Co. We’re Justin & Ben, a couple guys from the DC suburb of Woodbridge, VA. We absolutely love great chocolate. That passion for chocolate has driven us to want to start making it. This blog is going to track our chocolate-making adventure from the beginning.
To start, our chocolate is going to be pure bean-to-bar, made in teeny-tiny (compared to most chocolate makers) batches using a very hands-on, old-school artisan approach. We’ll only use the best beans and other ingredients and will fine-tune every step in the process to bring out the best flavors of the beans. Our goal is not to make the most chocolate–it’s to make the best chocolate.
Along the way, we’re going to have a lot of fun, make a lot of mistakes (and messes, I’d bet) and hopefully make some killer chocolate. We’re hoping to have our first bar ready in the fall. This may be wildly optimistic, but that’s who we are (of course, we’ll only introduce a bar when it’s perfect, even it takes longer than we hope).
We’ll be posting updates frequently and keeping everyone current on our progress towards bar #1. We want you to be part of this, too! I eagerly await your product! We are dark chocolate fans (my son up to 90%, he almost eats the unsweetened cocoa out of the can!) and will be among the first paying customers! ๐ I have noticed a lot of people eating small amounts of dark chocolate for the antioxidants they are touted to have. I think it’s funny they need justification!

Lauren: When I first started with fine chocolate, the more fruity chocolate didn’t really do it for me. But, since then, I’ve really grown to love it. So, subtle fruitiness is definitely a possibility for our first bar.
Heidi: That *is* funny! But, whatever it takes to get them eating the good stuff is ok with me. ๐ I tried a 100% cacao bar (Pralus’ Madagascar) at Biagio in DC a while ago. It was…interesting. Nothing like what I consider chocolate, but interesting.
